Grilled Spring Veggie Pizza

Embrace the spring by combining two great things: pizza and your barbecue. You can actually use your barbecue to grill up a spring pizza.

The Veggies

  • 1 Portobello mushroom cap
  • 1 eggplant
  • 1 large bell pepper
  • ½ zucchini
  • ½ yellow squash
  • ½ red onion
  • ¼ cup sliced scallions
  • 3 gloves garlic

Remove the gills from the Portobello mushroom cap and dice it up. Cut the eggplant up into long slices. Cut the zucchini and yellow squash diagonally into slices that are about ½ inch thick. Finally, slice up the onion into small slice, no bigger than an inch.

Once all the veggies are cut up, throw them into a bowl and toss with some extra-virgin olive oil. Use enough oil to coat the veggies. Add a little freshly ground salt and pepper to the veggies.

Place the veggies onto a greased grill rack or inside of some tin foil. Place on the grill for about ten minutes.

The Pizza Dough

While the veggies are grilling, roll out the package of pre-made pizza dough that you picked up. Roll it out into a circular shape. Once it is the shape you want, throw it on the grill.

Your crust will grill up quickly. Let each side grill for two minutes. At this point, it should be a light golden brown. Don't worry; you will be grilling it more in a few minutes.

Putting It Together

Sprinkle some cheese on top of the pizza. You can go with some traditional mozzarella for the pizza. Or, you can try something a little different, such as some smoky Fontina cheese. Leave about ½ open space on the edge of the pizza.

This pizza is very tasty without any sauce added. However, if you want, you can add a little olive oil to the crust. Or, you can use your favorite tomato pizza sauce. Try to keep the sauce light, so it does not overpower the flavor of the veggies and the grill. 

Spread out the grilled veggies over the top of the pizza. Then let the pizza grill for about three more minutes. This will allow the crust time to turn a more golden brown, and will allow the cheese to melt. If the cheese is not melted, give it a few more minutes.
